Someone had a post similar to this, I think Swatson144. This is cheap and easy.
Buy a digital meat themometer-got mine a Walgreens-. Cut off the metal probe exposing the thermistor and wire. Splice in extra wire to make a convenient length. Now you have the thermistor on the end of 18" of wire. Add some shrink tubeing.
I slip the thermistor through a small hole in the motor mount of my test stand and between two windings of the motor.
It reads in degrees F or C. and has a high and low memory.

Great Idea. What does one of those thermometers cost?

Any tricks to getting the thermister out of the metal probe?

Found mine at Walgreens for less than $10. Just take a file and file around the probe about 1/2 inch from the plastic body. that will leave a sharp edge on the remaining metal so slip some shrink tubeing over the wires that go into the metal part to protect them.

Thanks for answering my questions. I thought a couple more. Did you check the calibration after the modifications? Is there any way to adjust the cal?

At room temp. it was within 1 o 2 degrees of other thermometers next to it, so I don't think the extra wire made any difference. I felt it was good enough for me. I don't know if there is a pot to adjust or not. I will look tonight.

Edit: Looked and there is no adjustment on the ck. board
