Just wondering how the carbon bearing tube is held in the stator?

Some folks just press the stator onto the tube... some prefer to CA or epoxy it. If you decide to glue it, it doesn't take much to secure the stator in place.

I was under the assumption that they got too hot to use epoxy. Does the carbon tube take the place of the original brass bushing holder?

Brushless motors should NEVER go over 80 degrees centigrade anyways as from that point on you loose the power in your magnets. Carbon and epoxy can withstand that heat without any problem. I would not advise to go over 100 degrees centigrade though.
The bearings do indeed go into the carbon tube. Use CA or epoxy sparingly to fix them. I found red thread lock to be very efficient too. Make sure you never get eny glue into the bearings though.
